OUTSIDE
PROVISIONS BEYOND THE KITCHEN
Food tastes different out here.
Coffee before sunrise on a fishing boat.
Lunch after a morning in the woods.
Fresh fish cleaned on the dock and cooked only hours after leaving the water.
Dinner around a fire when the day is done.
Some meals are meant to happen outside.
Forest Glen Kitchen — Outside brings the same care, craft, and hospitality behind Provisions into the places where food, landscape, adventure, and people come together.
This is not traditional catering.
It might be breakfast and provisions before a day on the water. It might be a working camp kitchen for an entire weekend. Or it might mean traveling alongside your group, cooking throughout the trip, helping care for the day's harvest, and creating dinner from what the experience gives us.
The setting changes.
The intention does not.
Good food. Thoughtfully prepared. Wherever the day takes you.
THE EXPERIENCE
Every trip has its own rhythm.
Sometimes I arrive with everything we need.
Sometimes we cook from what the day gives us.
Usually, it is a little of both.
The food is designed around the location, season, activity, and people involved—whether that means cooking beside a river, aboard a boat, at a campground, from the back of a truck, outside a cabin, or around a fire miles from home.
The idea is simple:
I take care of the food so you can be present for everything else.
CATCH & COOK
From water to table.
Fishing is one of the most natural expressions of Outside.
Coffee before departure.
Breakfast on the dock.
Food packed for the boat.
Something warm when everyone comes back in.
And when the day allows, the catch becomes dinner.
Outside can also include:
Fish breakdown and butchery
Cleaning and portioning
Vacuum sealing and packaging
Smoking and curing
Confit and preservation
Dockside and shoreside meals
Catch-and-cook dinners
On certain trips, I can travel and fish alongside the group—part chef, part provisioner, and part participant in the experience.
The result is more than dinner.
It is the completion of the day.
HUNT & HARVEST
Respect the harvest.
A hunting trip does not end when everyone leaves the field.
Outside can support the camp throughout the trip while also helping carry the harvest into the kitchen afterward.
That may include:
Whole-muscle cuts
Sausage
Ground meat
Stocks and broths
Smoking and curing
Charcuterie
Vacuum-sealed portions
Preservation for the freezer or larder
Or it can be much simpler—a beautiful meal prepared from part of what was harvested.
The philosophy is straightforward:
Respect the animal. Respect the work. Use what we have wisely.
BASECAMP
A kitchen wherever you need one.
Good food does not require a dining room.
For multi-day trips and gatherings, Forest Glen Kitchen can establish a temporary working kitchen around the rhythm of the group.
A Forest Glen Kitchen Basecamp might be set beside a river, outside a cabin, at a marina, on private property, at a campground, or wherever the experience is happening.
Coffee stays hot.
Food is ready when it needs to be.
People come and go.
The kitchen quietly keeps the day moving.
Basecamp works especially well for fishing groups, hunting camps, family reunions, outdoor workshops, private retreats, film crews, guides, sporting groups, and multi-day gatherings.
CAMP, TRAIL & BACKCOUNTRY
Food outside can still be generous, nourishing, and memorable.
Meals can be built specifically around the demands of the trip—transportation, weather, refrigeration, cooking equipment, activity level, and how far everyone will be from town.
That might mean:
Camp breakfasts before sunrise.
Handheld lunches for the trail.
Soup simmering while everyone is gone.
Grilled meats and vegetables over fire.
Fresh bread warmed beside the coals.
Broths and stews after a long, cold day.
Coffee waiting before anyone else is awake.
The food should belong to the place rather than feel transported into it.
WATER, RIVERS & COAST
The Columbia.
The Oregon Coast.
Mountain lakes.
Salmon rivers.
Offshore tuna grounds.
Crabbing.
Clamming.
Boating.
A weekend beside the water.
Meals are built around the rhythm of the day rather than forcing the day to revolve around meals.
Easy food while underway.
Something warm when you return.
A fire.
A table.
And when the day provides it, a true water-to-table dinner.
GATHER OUTSIDE
Not every Outside experience needs to be an expedition.
Sometimes it is simply a reason to gather somewhere beautiful.
Family reunions.
Birthday weekends.
Cabins.
Lake houses.
Campgrounds.
Backyard fires.
Private properties.
Outdoor celebrations.
Small retreats.
Instead of spending the weekend shopping, chopping, cooking, serving, and cleaning, you get to remain part of the gathering.
The food can stay relaxed and generous while still carrying the care and craftsmanship of Forest Glen Kitchen.
THE HARVEST TABLE
Let the day write part of the menu.
The Harvest Table is one of the experiences at the heart of Outside.
The day begins somewhere beyond the kitchen.
Fishing.
Foraging.
Crabbing.
Clamming.
Hunting.
Walking a farm.
Exploring the coast.
Then we come back and cook.
Not every part of the menu has to be decided beforehand because part of the story has not happened yet.
What we find becomes part of what we eat.
It is part adventure.
Part cooking.
Part gathering.
Part dinner.
And the meal becomes a record of the day that created it.
BUILD YOUR OUTSIDE EXPERIENCE
There is no standard Outside package because there is no standard adventure.
An experience might become:
Morning Provisions
Coffee, breakfast, lunches, snacks, hydration, and everything needed before departure.
Catch & Cook
A day on the water followed by fish breakdown and a meal from the day's catch.
Basecamp Chef
A temporary working kitchen serving your group throughout the day or weekend.
Weekend Provisioner
Food and provisions handled throughout a multi-day trip or gathering.
Harvest & Preserve
A day's catch or harvest transformed into food for the freezer, pantry, smokehouse, or table.
The Harvest Table
A custom outdoor experience built around gathering something and cooking from the day.
Every trip begins the same way.
We talk about where you're going, what you're doing, who is coming, what facilities are available, and how you want the experience to feel.
Then I build the food around it.
GO OUTSIDE.
Fish.
Walk.
Hunt.
Explore.
Gather.
Build a fire.
Sit beside the water.
Spend time with the people you came with.
Let the day unfold.
I'll take care of the food.
